Epoppie's Chicken Biryani Recipe
1) Chicken
. Add 6 chicken leg pieces (eg 3 legs, 3 thighs) to a pan. Add 1 cup water with 6 cloves garlic and 1 teaspoon salt. Bring to the boil once and then reduce the heat to lowest possible heat and cook for 30 minutes.
2)Rice. Bring 4 cups of water to the boil in a large pan. Add 2 cups rice. Bring to the boil once and then lower heat. Cook until half cooked - about 10 minutes. Turn the heat off and if there is any water left, drain it away.
3) Masala. Slice one medium onion and fry in 2 tablespoons of oil on medium heat until light brown. Add one packet of Biryani mix - I use Laziza. Add 100g plain yoghurt. Mix thoroughly and cook for a few minutes.
Now add the chicken to the masala mix and coat it all. Heat through and stir gently for a few minutes.
In another large pan add one layer of the rice. Then add half the chicken/masala mix. Then add another layer of rice. Then add the rest of the masala mix. Then cover with the remaining rice. If the masala mix was dry, add a mug of boiling water to the rice. If it was moist, there is no need for extra water. If you have yellow food colour, add a few dots to the top of the rice. If you have kewra, add a few drops over the top of the rice. Cover the rice pan with a lid and let the dish cook for about 20 minutes on the lowest heat. Meanwhile prepare some cucumber raita (grated cucumber, yoghurt, salt, pepper) or salad. Enjoy!
